Coconutty Date Chia Pudding Parfait

Chia seeds are small but mighty! They never cease to amaze me with all of their superfood attributes and versatility. They're packed with fiber, protein, and essential fatty acids. They're ideal for vegans in order to meet protein and omega 3/6 requirements because they have more omegas than salmon and more calcium than milk! Seriously, if you haven't heard of these little superfoods, you need to get on the bandwagon. I sprinkle them on oats, salads, smoothies, and even use them as an egg replaced in baking! All hail the mighty chia seed!

Ingredients:

  • 3 tbsp chia seeds
  • 1/4 cup coyo (you could try using canned coconut milk if this is unavailable but I've never tried)
  • 1/3 cup almond milk
  • 2 chopped dates
  • 1/2 Tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 tsp coconut sugar, lucuma, or maca (optional)

Topping ideas: berries and granola, buckwheat groats, hemp seeds, berry compote, drizzle of maple syrup, nuts, coconut flakes, almond butter, etc. 

Method:

Simply mix everything together in an airtight container and leave it to set overnight. You want it to look more liquidy than the final pudding consistency because the chia seeds can absorb up to 10-12x their weight! They're truly amazing! In the morning, top with your desired toppings and eat as a nourishing breakfast or snack!
